Chechen-style Borscht (Борш)

Ingredients

  • 1 lb beef, cubed
  • 2 onions, chopped
  • 3 carrots, grated
  • 4 beets, grated
  • 4 potatoes, diced
  • 1/2 cabbage, shredded
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1/4 cup white vinegar
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh dill, for garnish

Instructions

  1. In a large pot, brown the beef over medium heat.
  2. Add the onions and carrots, and cook until softened.
  3. Stir in the beets, potatoes, cabbage, and garlic.
  4. Add the tomato paste, vinegar, bay leaf, salt, and pepper.
  5. Pour in enough water to cover all the ingredients.
  6. Simmer for 1 hour, or until the vegetables are tender and the flavors have melded.
  7. Adjust seasoning if needed, then serve hot, garnished with fresh dill.
