Chechen-style Borscht (Борш)
Borsh is a traditional soup in Chechen cuisine, known for its rich and hearty flavors. This Chechen-style borscht recipe features a unique blend of ingredients that sets it apart from other variations of borscht.
Ingredients
- 1 lb beef, cubed
- 2 onions, chopped
- 3 carrots, grated
- 4 beets, grated
- 4 potatoes, diced
- 1/2 cabbage, shredded
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 1/4 cup white vinegar
- 1 bay leaf
- Salt and pepper to taste
- Fresh dill, for garnish
Instructions
- In a large pot, brown the beef over medium heat.
- Add the onions and carrots, and cook until softened.
- Stir in the beets, potatoes, cabbage, and garlic.
- Add the tomato paste, vinegar, bay leaf, salt, and pepper.
- Pour in enough water to cover all the ingredients.
- Simmer for 1 hour, or until the vegetables are tender and the flavors have melded.
- Adjust seasoning if needed, then serve hot, garnished with fresh dill.
