Chechen-style Meat Empanadas (Къуламаш)

Ingredients

  • 500g ground beef
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 500g flour
  • 200g butter, chilled and diced
  • 1 egg, beaten
  • 1/4 cup cold water

Instructions

  1. In a large bowl, mix the ground beef, onions, garlic, cumin, paprika, salt, and pepper to make the meat filling.
  2. In a separate bowl, combine the flour and chilled diced butter. Use your fingers to rub the butter into the flour until it resembles breadcrumbs.
  3. Add the beaten egg and cold water to the flour mixture, and knead until a dough forms.
  4. Divide the dough into 12 equal portions and roll each portion into a circle on a floured surface.
  5. Place a spoonful of the meat filling in the center of each dough circle, then fold the dough over the filling to form a half-moon shape. Press the edges to seal.
  6. Heat oil in a skillet over medium heat and fry the empanadas until golden brown on both sides.
  7. Remove from the skillet and drain on paper towels before serving.
