Chechen-style Meat Pie (Къуламаш)
Kъуламаш (Chechen-style Meat Pie) is a traditional dish from Chechen cuisine, featuring a flavorful meat filling encased in a flaky pastry crust. This hearty pie is perfect for a comforting family meal or a special occasion.
Ingredients
- 500g ground beef
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 2 cups all-purpose flour
- 1/2 cup cold water
- 1/2 cup vegetable oil
Instructions
- In a large bowl, mix the ground beef, chopped onion, minced garlic, salt, black pepper, and cumin until well combined.
- Preheat the oven to 375°F (190°C).
- In a separate bowl, combine the flour, cold water, and vegetable oil to make the pastry dough. Knead the dough until smooth.
- Divide the dough into two equal portions. Roll out one portion to fit the bottom of a pie dish.
- Spread the meat mixture over the pastry in the pie dish.
- Roll out the remaining dough and place it over the meat filling, sealing the edges.
- Poke a few holes in the top crust to allow steam to escape during baking.
- Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
