Chechen-style Meat Pie (Къуламаш)

Ingredients

  • 500g ground beef
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 2 cups all-purpose flour
  • 1/2 cup cold water
  • 1/2 cup vegetable oil

Instructions

  1. In a large bowl, mix the ground beef, chopped onion, minced garlic, salt, black pepper, and cumin until well combined.
  2. Preheat the oven to 375°F (190°C).
  3. In a separate bowl, combine the flour, cold water, and vegetable oil to make the pastry dough. Knead the dough until smooth.
  4. Divide the dough into two equal portions. Roll out one portion to fit the bottom of a pie dish.
  5. Spread the meat mixture over the pastry in the pie dish.
  6. Roll out the remaining dough and place it over the meat filling, sealing the edges.
  7. Poke a few holes in the top crust to allow steam to escape during baking.
  8. Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown.
  9. Remove from the oven and let it cool for a few minutes before slicing and serving.
