Chechen-style Meat Samosas (Къуламаш)
Къуламаш (Chechen-style Meat Samosas) are savory pastries filled with spiced meat and onions, popular in Chechen cuisine. They are perfect as a snack or appetizer, and can be enjoyed on their own or with a side of chutney or yogurt sauce.
Ingredients
- 1 lb ground beef
- 2 onions, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground coriander
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 12 sheets of phyllo pastry
- 1/4 cup melted butter
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the ground beef, cumin, paprika, coriander, salt, and pepper. Cook until the beef is browned, breaking it up with a spoon.
- Preheat the oven to 375°F (190°C).
- Place a sheet of phyllo pastry on a clean work surface and brush it with melted butter. Fold the sheet in half lengthwise.
- Place a spoonful of the meat filling at the bottom of the strip. Fold the pastry over the filling to form a triangle, then continue folding up the strip to enclose the filling in a triangular shape.
- Repeat with the remaining pastry and filling.
- Place the samosas on a baking sheet and brush the tops with melted butter.
- Bake for 15-20 minutes, or until the samosas are golden brown and crispy.
- Serve the kъуламаш hot with chutney or yogurt sauce.
