Chechen-style Meat Samosas (Къуламаш)

Ingredients

  • 1 lb ground beef
  • 2 onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground coriander
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 12 sheets of phyllo pastry
  • 1/4 cup melted butter

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the ground beef, cumin, paprika, coriander, salt, and pepper. Cook until the beef is browned, breaking it up with a spoon.
  3. Preheat the oven to 375°F (190°C).
  4. Place a sheet of phyllo pastry on a clean work surface and brush it with melted butter. Fold the sheet in half lengthwise.
  5. Place a spoonful of the meat filling at the bottom of the strip. Fold the pastry over the filling to form a triangle, then continue folding up the strip to enclose the filling in a triangular shape.
  6. Repeat with the remaining pastry and filling.
  7. Place the samosas on a baking sheet and brush the tops with melted butter.
  8. Bake for 15-20 minutes, or until the samosas are golden brown and crispy.
  9. Serve the kъуламаш hot with chutney or yogurt sauce.
