Cheese Dumplings in Sweetened Milk, also known as Rasabali, is a traditional dessert from Odia Cuisine. This delectable sweet dish is made with cheese dumplings soaked in sweetened thickened milk, flavored with cardamom and saffron.
Ingredients
- 1 liter whole milk
- 200g paneer (Indian cottage cheese)
- 1 cup sugar
- 1/2 tsp cardamom powder
- A pinch of saffron strands
- 2 tbsp all-purpose flour
- Ghee for frying
Instructions
- In a heavy-bottomed pan, boil the milk and reduce it to half, stirring occasionally.
- Crumble the paneer and knead it with all-purpose flour to form a smooth dough. Divide the dough into small equal-sized balls and flatten them slightly to form dumplings.
- Heat ghee in a pan and fry the paneer dumplings until golden brown. Drain and set aside.
- Add sugar, cardamom powder, and saffron to the reduced milk. Stir well and simmer for a few minutes.
- Gently drop the fried paneer dumplings into the sweetened milk and let it simmer for another 5 minutes.
- Remove from heat and let it cool. Refrigerate for at least an hour before serving.
