Cheese-filled Pastry (Poale-n Brau)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1/2 cup sour cream
  • 1 egg
  • 1 cup feta cheese, crumbled
  • 1/2 cup cottage cheese
  • 1/4 cup chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. In a small bowl, whisk together the sour cream and egg. Pour this mixture into the flour mixture and stir until a dough forms.
  3. Divide the dough into 2 equal parts. Roll out each part into a thin rectangle on a floured surface.
  4. In a separate bowl, mix together the feta cheese, cottage cheese, dill, salt, and pepper.
  5. Spread the cheese mixture evenly over one of the rolled-out dough rectangles.
  6. Place the second rolled-out dough rectangle on top of the cheese mixture and press the edges to seal.
  7. Cut the filled dough into squares or triangles.
  8. Place the pastries on a baking sheet and bake in a preheated oven at 375°F (190°C) for 20 minutes or until golden brown.
