Cheese-filled Pastry (Poale-n Brau)
Poale-n Brau is a traditional Romani cheese-filled pastry that is popular in Eastern Europe. These delicious pastries are perfect for breakfast, brunch, or as a snack.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/2 cup sour cream
- 1 egg
- 1 cup feta cheese, crumbled
- 1/2 cup cottage cheese
- 1/4 cup chopped fresh dill
- Salt and pepper to taste
Instructions
- In a large bowl, mix the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the sour cream and egg. Pour this mixture into the flour mixture and stir until a dough forms.
- Divide the dough into 2 equal parts. Roll out each part into a thin rectangle on a floured surface.
- In a separate bowl, mix together the feta cheese, cottage cheese, dill, salt, and pepper.
- Spread the cheese mixture evenly over one of the rolled-out dough rectangles.
- Place the second rolled-out dough rectangle on top of the cheese mixture and press the edges to seal.
- Cut the filled dough into squares or triangles.
- Place the pastries on a baking sheet and bake in a preheated oven at 375°F (190°C) for 20 minutes or until golden brown.
