Ingredients
- 1 liter full-fat milk
- 2-3 tablespoons lemon juice
- 1 cup sugar
- 4 cups water
- 1/2 teaspoon cardamom powder
- Oil for frying
Instructions
- Boil the milk in a heavy-bottomed pan. Once it comes to a boil, add the lemon juice and stir until the milk curdles.
- Strain the curdled milk through a muslin cloth to separate the cheese (chenna) from the whey. Rinse the chenna under cold water to remove the lemony flavor.
- Knead the chenna until it becomes smooth and roll it into small balls. Flatten the balls slightly to form fritters.
- Heat oil in a pan and fry the fritters until they turn golden brown. Remove and set aside.
- In a separate pan, combine the sugar and water to make the sugar syrup. Bring it to a boil and simmer for 5 minutes.
- Add the fried fritters to the sugar syrup and let them soak for at least 2 hours.
- Sprinkle cardamom powder over the fritters before serving.
