Cheese Pierogi (Tvarohové pirohy)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup water
  • 1 pound tvaroh (Slovakian quark cheese)
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup butter
  • 1/2 cup bread crumbs

Instructions

  1. In a large bowl, mix the flour and salt. Add the egg and water, and knead the dough until smooth. Cover and let it rest for 30 minutes.
  2. In another bowl, combine the tvaroh, sugar, and vanilla extract to make the filling.
  3. Roll out the dough on a floured surface and cut out circles using a glass or a cookie cutter.
  4. Place a spoonful of the cheese filling in the center of each circle, then fold the dough over and seal the edges.
  5. Boil the pierogi in a large pot of salted water for 5-7 minutes, or until they float to the surface.
  6. In a separate pan, melt the butter and toast the bread crumbs until golden brown.
  7. Serve the pierogi with the toasted bread crumbs on top.
