Cheese Pudding (Chhena Kheeri) is a traditional dessert from Odia Cuisine that is creamy, rich, and full of delicious flavors. This sweet dish is made with fresh cheese, milk, and sugar, and is often garnished with nuts and saffron.
Ingredients
- 1 liter whole milk
- 1 lemon (juiced)
- 1/2 cup sugar
- 1/4 cup chopped nuts (almonds, pistachios)
- A pinch of saffron strands
Instructions
- Boil the milk in a heavy-bottomed pan.
- Once the milk comes to a boil, add the lemon juice and stir until the milk curdles.
- Strain the curdled milk through a muslin cloth to separate the cheese (chhena) from the whey.
- In a separate pan, heat the chhena and sugar together, stirring continuously until the mixture thickens.
- Add the chopped nuts and saffron strands, and mix well.
- Remove from heat and let it cool before refrigerating for a few hours.
- Serve chilled and garnish with more nuts and saffron strands if desired.
