Ingredients
- 1 cup cooked and shelled fava beans
- 1 cup cooked and shelled lima beans
- 1 cup fresh corn kernels
- 1 cup diced queso fresco (or feta cheese)
- 1/2 cup diced red onion
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced black olives
- 1/4 cup sliced rocoto peppers (or red bell peppers)
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the fava beans, lima beans, corn, queso fresco, red onion, tomatoes, cilantro, olives, and rocoto peppers.
