Cheese Salad (solterito De Queso)

Ingredients

  • 1 cup cooked and shelled fava beans
  • 1 cup cooked and shelled lima beans
  • 1 cup fresh corn kernels
  • 1 cup diced queso fresco (or feta cheese)
  • 1/2 cup diced red onion
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced black olives
  • 1/4 cup sliced rocoto peppers (or red bell peppers)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the fava beans, lima beans, corn, queso fresco, red onion, tomatoes, cilantro, olives, and rocoto peppers.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
