Instructions
- In a large mixing bowl, combine the flour, eggs, milk, salt, and nutmeg to form a smooth, thick batter.
- Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter into the boiling water to form small dumplings.
- Cook the spaetzle for 2-3 minutes or until they float to the surface, then remove them with a slotted spoon and transfer to a colander to drain.
- Layer the cooked spaetzle in a baking dish with the grated cheeses, repeating until all the spaetzle and cheese are used up.
- Preheat the oven to 375°F (190°C). Bake the Käsespätzle for 15-20 minutes or until the cheese is melted and bubbly.
- If desired, sprinkle fried onions on top before serving.
