Ingredients

  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F.
  2. In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese, 1 cup sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake for 55-60 minutes, or until the center is set. Let the cheesecake cool in the oven with the door ajar for 1 hour.
  6. Refrigerate the cheesecake for at least 4 hours before serving.
