Ingredients
- 1 cup shredded coconut
- 1/2 cup sugar
- 6 egg yolks
- 1/4 cup butter, melted
- 1/2 cup cream cheese
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1/4 cup heavy cream
- 1/4 cup granulated sugar
- 1/4 cup sour cream
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a bowl, combine the shredded coconut and sugar. Press the mixture into the bottom of the prepared pan to form the crust.
- In a separate bowl, whisk together the egg yolks, melted butter, cream cheese, sweetened condensed milk, and vanilla extract until smooth. Gradually add the flour and mix until well combined.
- Pour the cream cheese mixture over the coconut crust in the pan. Smooth the top with a spatula.
- Bake in the preheated oven for 45-50 minutes, or until the center is set and the edges are golden brown.
- While the cheesecake is baking, prepare the topping by whisking together the heavy cream, granulated sugar, and sour cream until smooth.
- Once the cheesecake is done, remove it from the oven and let it cool to room temperature. Then, spread the topping evenly over the top of the cheesecake.
- Refrigerate the cheesecake for at least 4 hours, or overnight, before serving.
