Cheesecake De Quindim (quindim Cheesecake)

Ingredients

  • 1 cup shredded coconut
  • 1/2 cup sugar
  • 6 egg yolks
  • 1/4 cup butter, melted
  • 1/2 cup cream cheese
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 cup heavy cream
  • 1/4 cup granulated sugar
  • 1/4 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, combine the shredded coconut and sugar. Press the mixture into the bottom of the prepared pan to form the crust.
  3. In a separate bowl, whisk together the egg yolks, melted butter, cream cheese, sweetened condensed milk, and vanilla extract until smooth. Gradually add the flour and mix until well combined.
  4. Pour the cream cheese mixture over the coconut crust in the pan. Smooth the top with a spatula.
  5. Bake in the preheated oven for 45-50 minutes, or until the center is set and the edges are golden brown.
  6. While the cheesecake is baking, prepare the topping by whisking together the heavy cream, granulated sugar, and sour cream until smooth.
  7. Once the cheesecake is done, remove it from the oven and let it cool to room temperature. Then, spread the topping evenly over the top of the cheesecake.
  8. Refrigerate the cheesecake for at least 4 hours, or overnight, before serving.
