Cheesecake Me Baklava (baklava Cheesecake)

Ingredients
- 1 1/2 cups crushed graham crackers
- 1/4 cup melted butter
- 1/4 cup sugar
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts
- 1/2 cup chopped pistachios
- 1/2 tsp ground cinnamon
- 1/2 cup honey
- 1/4 cup water
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the crushed graham crackers, melted butter, and 1/4 cup of sugar. Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese and 1/2 cup of sugar until smooth. Add the eggs and vanilla extract, and continue beating until well combined.
- Pour the cream cheese mixture over the crust in the springform pan.
- In a separate bowl, mix the chopped walnuts, chopped pistachios, and ground cinnamon. Sprinkle this nut mixture over the cream cheese layer.
- Bake in the preheated oven for 40-45 minutes, or until the cheesecake is set.
- In a small saucepan, heat the honey and water over low heat until combined. Drizzle the honey mixture over the baked cheesecake.
- Allow the cheesecake to cool, then refrigerate for at least 4 hours before serving.
