Cheesecake Me Baklava (baklava Cheesecake)

Ingredients

  • 1 1/2 cups crushed graham crackers
  • 1/4 cup melted butter
  • 1/4 cup sugar
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped pistachios
  • 1/2 tsp ground cinnamon
  • 1/2 cup honey
  • 1/4 cup water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the crushed graham crackers, melted butter, and 1/4 cup of sugar. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese and 1/2 cup of sugar until smooth. Add the eggs and vanilla extract, and continue beating until well combined.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. In a separate bowl, mix the chopped walnuts, chopped pistachios, and ground cinnamon. Sprinkle this nut mixture over the cream cheese layer.
  6. Bake in the preheated oven for 40-45 minutes, or until the cheesecake is set.
  7. In a small saucepan, heat the honey and water over low heat until combined. Drizzle the honey mixture over the baked cheesecake.
  8. Allow the cheesecake to cool, then refrigerate for at least 4 hours before serving.
