Ingredients

  • 4 Ġbejniet (Maltese cheeselets)
  • 4 soft flatbreads
  • 1 tomato, sliced
  • 1 onion, thinly sliced
  • Fresh basil leaves
  • 4 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a non-stick pan over medium heat.
  2. Place the flatbreads on the pan and warm them for about 1 minute on each side.
  3. In a separate pan, heat the olive oil and sauté the onion until golden brown.
  4. Place a cheeselet in the center of each flatbread.
  5. Top the cheeselet with sliced tomato, sautéed onion, and fresh basil leaves.
  6. Season with salt and pepper.
  7. Wrap the flatbread around the filling, securing it with toothpicks if needed.
  8. Return the wraps to the pan and cook for 2-3 minutes on each side until golden brown and crispy.
  9. Remove the toothpicks and serve hot.
