Cheesy Churro Bites

Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 eggs
  • 1 cup shredded Manchego cheese
  • Vegetable oil, for frying
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. In a saucepan, bring water, butter, and salt to a boil. Remove from heat and stir in flour until a smooth dough forms.
  2. Beat in eggs, one at a time, until smooth. Stir in shredded Manchego cheese.
  3. In a heavy-bottomed pot, heat vegetable oil to 375°F (190°C).
  4. Transfer churro dough to a piping bag fitted with a large star tip. Pipe 2-inch strips of dough into the hot oil, cutting with a knife or kitchen shears.
  5. Fry churros until golden brown, then drain on paper towels.
  6. In a shallow dish, combine sugar and cinnamon. Roll churros in the mixture to coat.
  7. Serve warm and enjoy!
