Cheesy Churro Bites

Ingredients
- 1 cup water
- 1/2 cup unsalted butter
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 4 eggs
- 1 cup shredded Manchego cheese
- Vegetable oil, for frying
- 1/4 cup sugar
- 1 teaspoon ground cinnamon
Instructions
- In a saucepan, bring water, butter, and salt to a boil. Remove from heat and stir in flour until a smooth dough forms.
- Beat in eggs, one at a time, until smooth. Stir in shredded Manchego cheese.
- In a heavy-bottomed pot, heat vegetable oil to 375°F (190°C).
- Transfer churro dough to a piping bag fitted with a large star tip. Pipe 2-inch strips of dough into the hot oil, cutting with a knife or kitchen shears.
- Fry churros until golden brown, then drain on paper towels.
- In a shallow dish, combine sugar and cinnamon. Roll churros in the mixture to coat.
- Serve warm and enjoy!
