Cheesy Mushroom And Spinach Lasagna

Ingredients

  • 9 lasagna noodles
  • 2 cups sliced mushrooms
  • 2 cups fresh spinach
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. In a large bowl, combine the ricotta cheese, Parmesan cheese, mozzarella cheese, egg, garlic powder, oregano, salt, and black pepper. Mix well.
  4. In a 9x13 inch baking dish, spread 1 cup of marinara sauce on the bottom. Place 3 cooked lasagna noodles on top.
  5. Spread half of the cheese mixture over the noodles, then layer half of the mushrooms and half of the spinach on top.
  6. Repeat the layers with 1 cup of marinara sauce, 3 lasagna noodles, the remaining cheese mixture, mushrooms, and spinach.
  7. Top with the remaining 1 cup of marinara sauce and sprinkle with additional mozzarella cheese if desired.
  8. Cover the dish with foil and bake for 30 minutes. Then remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  9. Let the lasagna rest for 10 minutes before slicing and serving.
