Cheesy Mushroom Pierogi

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup sour cream
  • 1/4 cup unsalted butter, melted
  • 1 cup diced mushrooms
  • 1 cup shredded cheese (such as cheddar or mozzarella)
  • 1/2 cup diced onion
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the flour and salt. Make a well in the center and add the egg, sour cream, and melted butter. Mix until a dough forms, then knead until smooth. Cover and let rest for 30 minutes.
  2. In a skillet, sauté the mushrooms and onions until tender. Season with salt and pepper, then remove from heat and let cool. Stir in the shredded cheese.
  3. Roll out the dough on a floured surface and cut into circles. Place a spoonful of the mushroom and cheese filling in the center of each circle. Fold the dough over the filling and press the edges to seal.
  4. Bring a large pot of salted water to a boil. Cook the pierogi in batches for 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and drain.
