Ingredients
- 4 large bell peppers
- 2 cups Salvadoran cheese, shredded
- 1 cup cooked rice
- 1/2 cup tomato sauce
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix the Salvadoran cheese, cooked rice, tomato sauce, onion, garlic, cilantro, salt, and pepper.
- Stuff the bell peppers with the cheese and rice mixture.
- Place the stuffed bell peppers in a baking dish and cover with aluminum foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is melted and bubbly.
