Cheesy Salvadoran Stuffed Bell Peppers (Pimientos Rellenos de Queso Salvadoreños)

Ingredients

  • 4 large bell peppers
  • 2 cups Salvadoran cheese, shredded
  • 1 cup cooked rice
  • 1/2 cup tomato sauce
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix the Salvadoran cheese, cooked rice, tomato sauce, onion, garlic, cilantro, salt, and pepper.
  4. Stuff the bell peppers with the cheese and rice mixture.
  5. Place the stuffed bell peppers in a baking dish and cover with aluminum foil.
