Cheesy Spinach And Feta Börek

Ingredients
- 1 package of phyllo dough
- 1/2 cup melted butter
- 1 pound fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
- 2 eggs, beaten
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the spinach, feta cheese, mozzarella cheese, parsley, eggs, salt, and pepper.
- Unroll the phyllo dough and cut the stack in half lengthwise. Cover the sheets with a damp towel to keep them from drying out as you work.
- Place two sheets of phyllo dough on a clean surface and brush lightly with melted butter. Repeat the process until you have 6 layers.
- Spoon 3 tablespoons of the spinach mixture into a long line along the edge of the phyllo dough. Roll the phyllo dough up to form a long cylinder, then shape it into a coil and place it on a baking sheet.
- Repeat with the remaining phyllo dough and spinach mixture to make 6 coils.
- Brush the tops of the coils with the remaining melted butter.
- Bake in the preheated oven for 35 to 40 minutes, or until golden brown.
- Remove from the oven and let cool for a few minutes before serving.
