Cheesy Spinach And Feta Börek

Ingredients

  • 1 package of phyllo dough
  • 1/2 cup melted butter
  • 1 pound fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley
  • 2 eggs, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the spinach, feta cheese, mozzarella cheese, parsley, eggs, salt, and pepper.
  3. Unroll the phyllo dough and cut the stack in half lengthwise. Cover the sheets with a damp towel to keep them from drying out as you work.
  4. Place two sheets of phyllo dough on a clean surface and brush lightly with melted butter. Repeat the process until you have 6 layers.
  5. Spoon 3 tablespoons of the spinach mixture into a long line along the edge of the phyllo dough. Roll the phyllo dough up to form a long cylinder, then shape it into a coil and place it on a baking sheet.
  6. Repeat with the remaining phyllo dough and spinach mixture to make 6 coils.
  7. Brush the tops of the coils with the remaining melted butter.
  8. Bake in the preheated oven for 35 to 40 minutes, or until golden brown.
  9. Remove from the oven and let cool for a few minutes before serving.
