Cheesy Spinach Pie (Ispanaklı Börek)
Ispanaklı Börek, also known as Cheesy Spinach Pie, is a traditional dish in Gagauz cuisine that combines flaky pastry with a savory spinach and cheese filling. This recipe is perfect for a delicious appetizer or a light meal.
Ingredients
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1/2 cup green onions, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup olive oil
- 1 package phyllo dough
- Salt and pepper to taste
- 1/4 cup melted butter
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the chopped spinach, feta cheese, mozzarella cheese, green onions, dill, and olive oil. Season with salt and pepper.
- Unroll the phyllo dough and cut it into 3-inch wide strips. Brush each strip with melted butter.
- Place a spoonful of the spinach and cheese mixture at the end of each strip, then fold the dough over the filling to form a triangle. Continue folding the dough to the end of the strip.
- Place the filled triangles on a baking sheet and brush the tops with more melted butter.
- Bake in the preheated oven for 25-30 minutes, or until the börek is golden brown and crispy.
- Remove from the oven and let it cool for a few minutes before serving.
