Cheesy Spinach Pie (Ispanaklı Börek)

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup green onions, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • 1 package phyllo dough
  • Salt and pepper to taste
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the chopped spinach, feta cheese, mozzarella cheese, green onions, dill, and olive oil. Season with salt and pepper.
  3. Unroll the phyllo dough and cut it into 3-inch wide strips. Brush each strip with melted butter.
  4. Place a spoonful of the spinach and cheese mixture at the end of each strip, then fold the dough over the filling to form a triangle. Continue folding the dough to the end of the strip.
  5. Place the filled triangles on a baking sheet and brush the tops with more melted butter.
  6. Bake in the preheated oven for 25-30 minutes, or until the börek is golden brown and crispy.
  7. Remove from the oven and let it cool for a few minutes before serving.
