Chelo Kebab (spiced Lamb Kebabs)

Ingredients

  • 1 lb ground lamb
  • 1 onion, grated
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 cups basmati rice
  • 3 cups water
  • 1/4 tsp saffron threads, steeped in 2 tbsp hot water

Instructions

  1. In a bowl, mix the ground lamb, grated onion, minced garlic, cumin, coriander, cinnamon, cayenne pepper, salt, and pepper. Divide the mixture into 8 equal portions and shape each into a long, thin kebab around a skewer.
  2. Heat a grill or grill pan over medium-high heat. Cook the kebabs for 12-15 minutes, turning occasionally, until browned and cooked through.
  3. Meanwhile, rinse the basmati rice until the water runs clear. In a pot, combine the rice, water, and steeped saffron. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is fluffy and cooked through.
  4. Serve the spiced lamb kebabs with the saffron rice and enjoy!
