Chelo Kebab (spiced Lamb Kebabs)
Chelo Kebab is a popular dish in Caspian cuisine, featuring spiced lamb kebabs served with fluffy saffron-infused rice. This flavorful and aromatic dish is perfect for a special occasion or a weekend family meal.
Ingredients
- 1 lb ground lamb
- 1 onion, grated
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 cups basmati rice
- 3 cups water
- 1/4 tsp saffron threads, steeped in 2 tbsp hot water
Instructions
- In a bowl, mix the ground lamb, grated onion, minced garlic, cumin, coriander, cinnamon, cayenne pepper, salt, and pepper. Divide the mixture into 8 equal portions and shape each into a long, thin kebab around a skewer.
- Heat a grill or grill pan over medium-high heat. Cook the kebabs for 12-15 minutes, turning occasionally, until browned and cooked through.
- Meanwhile, rinse the basmati rice until the water runs clear. In a pot, combine the rice, water, and steeped saffron. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is fluffy and cooked through.
- Serve the spiced lamb kebabs with the saffron rice and enjoy!
