Ingredients
- 1 lb mixed seafood (such as shrimp, mussels, and squid)
- 2 cups Arborio rice
- 4 cups chicken or seafood broth
- 1 onion, chopped
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp saffron threads
- 1/2 cup frozen peas
- 1 lemon, cut into wedges
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a paella pan or large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, and sauté until softened.
- Add the Arborio rice, smoked paprika, and saffron threads to the pan. Stir to coat the rice with the oil and spices.
- Pour in the broth and bring to a simmer. Cook for 15-20 minutes, stirring occasionally, until the rice is almost tender and most of the liquid has been absorbed.
- Add the mixed seafood and frozen peas to the pan, and continue to cook for another 5-7 minutes, or until the seafood is cooked through and the rice is tender.
- Season with salt and pepper to taste. Serve the paella hot, garnished with lemon wedges.
