Chepstow Castle Seafood Paella

Ingredients

  • 1 lb mixed seafood (such as shrimp, mussels, and squid)
  • 2 cups Arborio rice
  • 4 cups chicken or seafood broth
  • 1 onion, chopped
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp saffron threads
  • 1/2 cup frozen peas
  • 1 lemon, cut into wedges

Instructions

  1. In a paella pan or large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, and sauté until softened.
  2. Add the Arborio rice, smoked paprika, and saffron threads to the pan. Stir to coat the rice with the oil and spices.
  3. Pour in the broth and bring to a simmer. Cook for 15-20 minutes, stirring occasionally, until the rice is almost tender and most of the liquid has been absorbed.
  4. Add the mixed seafood and frozen peas to the pan, and continue to cook for another 5-7 minutes, or until the seafood is cooked through and the rice is tender.
  5. Season with salt and pepper to taste. Serve the paella hot, garnished with lemon wedges.
