Chermoula (berber-style Grilled Fish)

Ingredients

  • 4 fish fillets (such as sea bass or red snapper)
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped parsley
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together the cilantro, parsley, garlic, cumin, paprika, coriander, cayenne pepper, olive oil, and lemon juice to make the chermoula marinade.
  2. Season the fish fillets with salt and pepper, then spread the chermoula marinade over the fillets, covering them evenly. Let the fish marinate for at least 15 minutes.
  3. Preheat the grill to medium-high heat. Grill the fish for about 4-5 minutes on each side, or until the fish is cooked through and has grill marks.
  4. Remove the fish from the grill and serve hot, garnished with extra chopped cilantro and lemon wedges if desired.
