Chermoula (berber-style Grilled Fish)
Chermoula is a flavorful marinade used in Berber cuisine to add a zesty and aromatic touch to grilled fish. This recipe combines traditional Berber spices and herbs to create a delicious and fragrant dish.
Ingredients
- 4 fish fillets (such as sea bass or red snapper)
- 1/4 cup chopped cilantro
- 1/4 cup chopped parsley
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a bowl, mix together the cilantro, parsley, garlic, cumin, paprika, coriander, cayenne pepper, olive oil, and lemon juice to make the chermoula marinade.
- Season the fish fillets with salt and pepper, then spread the chermoula marinade over the fillets, covering them evenly. Let the fish marinate for at least 15 minutes.
- Preheat the grill to medium-high heat. Grill the fish for about 4-5 minutes on each side, or until the fish is cooked through and has grill marks.
- Remove the fish from the grill and serve hot, garnished with extra chopped cilantro and lemon wedges if desired.
