Chermoula (berber-style Grilled Prawns)
Chermoula is a traditional marinade used in Berber cuisine to flavor grilled seafood. This recipe for Chermoula Grilled Prawns is a flavorful and aromatic dish that is perfect for a summer barbecue or a special dinner.
Ingredients
- 12 large prawns, deveined and shell on
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1/4 cup olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- In a bowl, mix together the cilantro, parsley, garlic, cumin, paprika, coriander, cayenne pepper, olive oil, and lemon juice to make the chermoula marinade.
- Add the prawns to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour.
- Preheat the grill to medium-high heat. Remove the prawns from the marinade and season with salt and pepper.
- Grill the prawns for 2-3 minutes per side, or until they are pink and opaque.
- Remove from the grill and serve hot.
