Chermoula (berber-style Grilled Prawns)

Ingredients

  • 12 large prawns, deveined and shell on
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together the cilantro, parsley, garlic, cumin, paprika, coriander, cayenne pepper, olive oil, and lemon juice to make the chermoula marinade.
  2. Add the prawns to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour.
  3. Preheat the grill to medium-high heat. Remove the prawns from the marinade and season with salt and pepper.
  4. Grill the prawns for 2-3 minutes per side, or until they are pink and opaque.
  5. Remove from the grill and serve hot.
