Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup ground almonds
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 teaspoon almond extract
  • 1/4 cup cherry jam
  • 1/4 cup sliced almonds
  • Confectioners' sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch tart pan.
  2. In a food processor, pulse together the flour, cold butter, granulated sugar, and salt until the mixture resembles coarse crumbs. Press the mixture into the prepared tart pan to form the crust.
  3. In a bowl, cream together the ground almonds, granulated sugar, softened butter, eggs, and almond extract. Spread the cherry jam over the crust, then pour the almond mixture on top.
  4. Sprinkle the sliced almonds over the top of the tart. Bake for 40 minutes, or until the filling is set and the crust is golden brown.
  5. Allow the tart to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with confectioners' sugar before serving.
