Cherry Bakewell Delight

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup ground almonds
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 eggs
- 1 teaspoon almond extract
- 1/4 cup cherry jam
- 1/4 cup sliced almonds
- Confectioners' sugar, for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch tart pan.
- In a food processor, pulse together the flour, cold butter, granulated sugar, and salt until the mixture resembles coarse crumbs. Press the mixture into the prepared tart pan to form the crust.
- In a bowl, cream together the ground almonds, granulated sugar, softened butter, eggs, and almond extract. Spread the cherry jam over the crust, then pour the almond mixture on top.
- Sprinkle the sliced almonds over the top of the tart. Bake for 40 minutes, or until the filling is set and the crust is golden brown.
- Allow the tart to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with confectioners' sugar before serving.
