Вишневый пирог (Cherry Charm) is a classic Belarusian dessert that is perfect for any occasion. This delicious cherry pie is made with a buttery crust and a sweet cherry filling that is sure to charm your taste buds.
Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, cold and cubed
- 1/2 cup cold water
- 4 cups pitted cherries
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon almond extract
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine the flour and cold cubed butter. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
- Add the cold water and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface and transfer it to a 9-inch pie dish.
- In a separate bowl, mix the pitted cherries, sugar, cornstarch, and almond extract. Pour the cherry filling into the prepared pie crust.
- Roll out the remaining dough and cut it into strips. Create a lattice pattern on top of the cherry filling. Trim any excess dough and crimp the edges to seal.
- Brush the top of the pie with the beaten egg wash. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
