Cherry Charm (Вишневый пирог)

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 1/2 cup cold water
  • 4 cups pitted cherries
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon almond extract
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, combine the flour and cold cubed butter. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
  2. Add the cold water and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface and transfer it to a 9-inch pie dish.
  4. In a separate bowl, mix the pitted cherries, sugar, cornstarch, and almond extract. Pour the cherry filling into the prepared pie crust.
  5. Roll out the remaining dough and cut it into strips. Create a lattice pattern on top of the cherry filling. Trim any excess dough and crimp the edges to seal.
  6. Brush the top of the pie with the beaten egg wash. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
