Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 can (21 oz) cherry pie filling
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese, 1 cup sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the sour cream.
- Pour the cream cheese mixture over the crust in the springform pan. Bake for 50 minutes or until the center is almost set.
- Remove the cheesecake from the oven and let it cool. Once cooled, refrigerate for at least 4 hours or overnight.
- Before serving, spread the cherry pie filling over the top of the cheesecake.
- Slice and serve the cherry cheesecake.
