Cherry Gazpacho, or Gazpacho de Cerezas, is a refreshing and flavorful cold soup that originates from the Extremaduran cuisine of Spain. This unique twist on the traditional gazpacho is perfect for hot summer days and showcases the delicious sweetness of cherries.
Ingredients
- 4 cups fresh cherries, pitted
- 1 cucumber, peeled and chopped
- 1 red bell pepper, seeded and chopped
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 3 cups tomato juice
- 1/4 cup red wine vinegar
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a blender, combine the cherries, cucumber, red bell pepper, red onion, and garlic. Blend until smooth.
- While blending, gradually add the tomato juice, red wine vinegar, and olive oil. Continue blending until well combined.
- Season the gazpacho with salt and pepper to taste. Blend again to incorporate the seasoning.
- Refrigerate the gazpacho for at least 2 hours before serving to allow the flavors to meld together.
- Before serving, taste and adjust the seasoning if needed. Serve the cherry gazpacho cold, garnished with a few whole cherries or a drizzle of olive oil.
