Ingredients
- 4 cups pitted cherries
- 1 cup sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/4 teaspoon salt
- 1 package store-bought pie crusts (2 crusts)
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, mix the pitted cherries, sugar, cornstarch, vanilla extract, almond extract, and salt until well combined.
- Preheat the oven to 375°F (190°C).
- Roll out one pie crust and place it in a 9-inch pie dish.
- Pour the cherry filling into the pie crust.
- Roll out the second pie crust and place it on top of the cherry filling. Trim and crimp the edges to seal the pie.
- Brush the top crust with the beaten egg to create a golden finish.
- Make several small slits in the top crust to allow steam to escape.
- Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
- Allow the pie to cool before serving.
