Cherry Soup (Čerešňová polievka)

Ingredients

  • 1 kg fresh cherries, pitted
  • 1 liter water
  • 100g granulated sugar
  • 1 cinnamon stick
  • 1 lemon, juiced
  • 1-2 tbsp cornstarch (optional, for thickening)

Instructions

  1. In a large pot, combine the pitted cherries, water, sugar, and cinnamon stick.
  2. Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes.
  3. Remove the pot from the heat and stir in the lemon juice.
  4. If desired, mix the cornstarch with a little water to create a slurry, then slowly pour it into the soup while stirring constantly to thicken.
  5. Let the soup cool to room temperature, then refrigerate for at least 2 hours before serving.
