Cherry Soup (Čerešňová polievka)
Čerešňová polievka, or Cherry Soup, is a traditional Slovak dish that is perfect for hot summer days. This refreshing fruit soup is sweet, tangy, and bursting with the flavors of fresh cherries.
Ingredients
- 1 kg fresh cherries, pitted
- 1 liter water
- 100g granulated sugar
- 1 cinnamon stick
- 1 lemon, juiced
- 1-2 tbsp cornstarch (optional, for thickening)
Instructions
- In a large pot, combine the pitted cherries, water, sugar, and cinnamon stick.
- Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes.
- Remove the pot from the heat and stir in the lemon juice.
- If desired, mix the cornstarch with a little water to create a slurry, then slowly pour it into the soup while stirring constantly to thicken.
- Let the soup cool to room temperature, then refrigerate for at least 2 hours before serving.
