Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 4 cups fresh cherries, pitted
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine the flour, 1/4 cup sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Gradually add cold water, 1 tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- In a saucepan, combine the cherries, 1/2 cup sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and stir in the vanilla extract. Let the cherry filling cool slightly.
- Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Place the dough in the pan and trim any excess. Prick the bottom of the dough with a fork.
- Pour the cherry filling into the prepared crust. Fold any excess dough over the edges of the filling, creating a rustic look.
- Brush the edges of the crust with the beaten egg to create a golden finish.
- Bake the cherry tart in the preheated oven for 35-40 minutes, or until the crust is golden brown.
