Ingredients

  • 4 cups fresh cherries, pitted
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, combine the flour, 1/4 cup sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  2. Gradually add cold water, 1 tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. In a saucepan, combine the cherries, 1/2 cup sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and stir in the vanilla extract. Let the cherry filling cool slightly.
  5. Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Place the dough in the pan and trim any excess. Prick the bottom of the dough with a fork.
  6. Pour the cherry filling into the prepared crust. Fold any excess dough over the edges of the filling, creating a rustic look.
  7. Brush the edges of the crust with the beaten egg to create a golden finish.
