Chhurpi Kheer (yak Milk Pudding)

Ingredients
- 2 cups chhurpi (yak cheese)
- 4 cups milk
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- A pinch of saffron strands
- Chopped nuts for garnish (optional)
Instructions
- In a heavy-bottomed pan, heat the milk over medium heat.
- Add the chhurpi and stir continuously until it melts and blends with the milk.
- Once the mixture thickens, add sugar, cardamom powder, and saffron strands. Stir well.
- Simmer for 5-10 minutes, stirring occasionally, until the kheer reaches the desired consistency.
- Remove from heat and let it cool to room temperature.
- Refrigerate for a few hours before serving.
- Garnish with chopped nuts before serving, if desired.
