Ingredients

  • 2 cups chhurpi (yak cheese)
  • 4 cups milk
  • 1/2 cup sugar
  • 1/4 teaspoon cardamom powder
  • A pinch of saffron strands
  • Chopped nuts for garnish (optional)

Instructions

  1. In a heavy-bottomed pan, heat the milk over medium heat.
  2. Add the chhurpi and stir continuously until it melts and blends with the milk.
  3. Once the mixture thickens, add sugar, cardamom powder, and saffron strands. Stir well.
  4. Simmer for 5-10 minutes, stirring occasionally, until the kheer reaches the desired consistency.
  5. Remove from heat and let it cool to room temperature.
  6. Refrigerate for a few hours before serving.
  7. Garnish with chopped nuts before serving, if desired.
