Chhurpi Ko Kofta (yak Meatball Soup)
Chhurpi Ko Kofta, also known as Yak Meatball Soup, is a traditional dish from Sikkimese Cuisine that is hearty, flavorful, and perfect for a cold day.
Ingredients
- 500g yak meat, minced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 1/2 cup chhurpi (dried yak cheese), grated
- 1/4 cup cilantro, chopped
- 1/4 cup cornstarch
- 8 cups beef or vegetable broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large bowl, mix the minced yak meat, chopped onion, minced garlic, grated ginger, grated chhurpi, chopped cilantro, and cornstarch. Season with salt and pepper.
- Form the mixture into small meatballs and set aside.
- Heat vegetable oil in a large pot over medium heat. Add the meatballs and cook until browned on all sides.
- Pour in the beef or vegetable broth and bring to a boil. Reduce heat and let the soup simmer for 30 minutes.
- Adjust seasoning with salt and pepper if needed.
- Serve the Chhurpi Ko Kofta hot, garnished with additional chopped cilantro if desired.
