Chhurpi Ko Kofta (yak Meatball Soup)

Ingredients

  • 500g yak meat, minced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 1/2 cup chhurpi (dried yak cheese), grated
  • 1/4 cup cilantro, chopped
  • 1/4 cup cornstarch
  • 8 cups beef or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large bowl, mix the minced yak meat, chopped onion, minced garlic, grated ginger, grated chhurpi, chopped cilantro, and cornstarch. Season with salt and pepper.
  2. Form the mixture into small meatballs and set aside.
  3. Heat vegetable oil in a large pot over medium heat. Add the meatballs and cook until browned on all sides.
  4. Pour in the beef or vegetable broth and bring to a boil. Reduce heat and let the soup simmer for 30 minutes.
  5. Adjust seasoning with salt and pepper if needed.
  6. Serve the Chhurpi Ko Kofta hot, garnished with additional chopped cilantro if desired.
