Ingredients
- 2 cups mixed vegetables (carrots, bell peppers, green beans, cauliflower)
- 1 onion, sliced
- 2 tomatoes, chopped
- 2 green chilies, sliced
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- 2 tablespoons oil
- Salt to taste
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add sliced onions and green chilies. Saute until the onions turn golden brown.
- Add the mixed vegetables and saute for 5-7 minutes until they are slightly tender.
- Stir in the chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook for another 5-7 minutes until the vegetables are fully cooked.
- Once the vegetables are cooked, remove from heat and serve hot.
