Ingredients

  • 2 cups mixed vegetables (carrots, bell peppers, green beans, cauliflower)
  • 1 onion, sliced
  • 2 tomatoes, chopped
  • 2 green chilies, sliced
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 2 tablespoons oil
  • Salt to taste

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add sliced onions and green chilies. Saute until the onions turn golden brown.
  2. Add the mixed vegetables and saute for 5-7 minutes until they are slightly tender.
  3. Stir in the chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook for another 5-7 minutes until the vegetables are fully cooked.
  4. Once the vegetables are cooked, remove from heat and serve hot.
