Chicha Morada Popsicles

Ingredients

  • 4 cups water
  • 2 cups purple corn kernels
  • 1 cinnamon stick
  • 4 cloves
  • 1 cup pineapple, diced
  • 1/2 cup sugar
  • 1/4 cup lime juice

Instructions

  1. In a large pot, combine the water, purple corn kernels, cinnamon stick, and cloves. Bring to a boil, then reduce heat and simmer for 30 minutes.
  2. Strain the liquid into a heatproof bowl and discard the solids.
  3. Add the diced pineapple, sugar, and lime juice to the strained liquid. Stir until the sugar is dissolved.
  4. Pour the mixture into popsicle molds and insert sticks. Freeze for at least 4 hours or until solid.
