Chicha Morada Popsicles

Ingredients
- 4 cups water
- 2 cups purple corn kernels
- 1 cinnamon stick
- 4 cloves
- 1 cup pineapple, diced
- 1/2 cup sugar
- 1/4 cup lime juice
Instructions
- In a large pot, combine the water, purple corn kernels, cinnamon stick, and cloves. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Strain the liquid into a heatproof bowl and discard the solids.
- Add the diced pineapple, sugar, and lime juice to the strained liquid. Stir until the sugar is dissolved.
- Pour the mixture into popsicle molds and insert sticks. Freeze for at least 4 hours or until solid.
