Ingredients
- 1 whole chicken, cut into pieces
- 10 black nuts (buah keluak)
- 2 tablespoons tamarind paste
- 4 cups water
- 4 kaffir lime leaves
- 2 lemongrass stalks, smashed
- 4 shallots, sliced
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- Salt to taste
Instructions
- Soak the black nuts in water for 2 days, changing the water daily.
- Boil the black nuts for 1 hour, then remove the flesh from the shells and set aside.
- In a large pot, heat the vegetable oil over medium heat and sauté the shallots and garlic until fragrant.
- Add the chicken pieces and cook until browned.
- Add the water, tamarind paste, kaffir lime leaves, lemongrass, and black nut flesh to the pot.
- Simmer the soup for 1.5 hours, or until the chicken is tender.
- Season with salt to taste.
- Serve the soup hot and enjoy!
