Ingredients

  • 1 whole chicken, cut into pieces
  • 10 black nuts (buah keluak)
  • 2 tablespoons tamarind paste
  • 4 cups water
  • 4 kaffir lime leaves
  • 2 lemongrass stalks, smashed
  • 4 shallots, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. Soak the black nuts in water for 2 days, changing the water daily.
  2. Boil the black nuts for 1 hour, then remove the flesh from the shells and set aside.
  3. In a large pot, heat the vegetable oil over medium heat and sauté the shallots and garlic until fragrant.
  4. Add the chicken pieces and cook until browned.
  5. Add the water, tamarind paste, kaffir lime leaves, lemongrass, and black nut flesh to the pot.
  6. Simmer the soup for 1.5 hours, or until the chicken is tender.
  7. Season with salt to taste.
  8. Serve the soup hot and enjoy!
