Chicken and Mushroom Stew (Ciorbă de Pui cu Ciuperci)
Ciorbă de Pui cu Ciuperci is a traditional Romanian chicken and mushroom stew that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 1 lb chicken, cut into pieces
- 1 onion, chopped
- 2 carrots, sliced
- 1 celery stalk, chopped
- 8 oz mushrooms, sliced
- 3 garlic cloves, minced
- 1 bay leaf
- 4 cups chicken broth
- 1/2 cup sour cream
- 2 tbsp flour
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Add the sliced mushrooms and minced garlic to the pot. Cook for another 5 minutes.
- Return the browned chicken pieces to the pot. Add the bay leaf and chicken broth. Season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- In a small bowl, mix the sour cream and flour until smooth. Gradually stir in a ladle of the hot broth from the pot to temper the sour cream mixture.
- Pour the sour cream mixture back into the pot and stir well. Simmer for an additional 10 minutes, stirring occasionally, until the stew thickens slightly.
- Remove the bay leaf and adjust the seasoning if needed. Serve the ciorbă de pui cu ciuperci hot, garnished with fresh herbs if desired.
