Chicken and Mushroom Stew (Ciorbă de Pui cu Ciuperci)

Ingredients

  • 1 lb chicken, cut into pieces
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 celery stalk, chopped
  • 8 oz mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 4 cups chicken broth
  • 1/2 cup sour cream
  • 2 tbsp flour
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  3. Add the sliced mushrooms and minced garlic to the pot. Cook for another 5 minutes.
  4. Return the browned chicken pieces to the pot. Add the bay leaf and chicken broth. Season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  5. In a small bowl, mix the sour cream and flour until smooth. Gradually stir in a ladle of the hot broth from the pot to temper the sour cream mixture.
  6. Pour the sour cream mixture back into the pot and stir well. Simmer for an additional 10 minutes, stirring occasionally, until the stew thickens slightly.
  7. Remove the bay leaf and adjust the seasoning if needed. Serve the ciorbă de pui cu ciuperci hot, garnished with fresh herbs if desired.
