Ingredients

  • 1 cup long-grain white rice
  • 1 3/4 cups chicken broth

  • 1/2 tsp oregano
  • 1/4 tsp paprika
  • 1 cup frozen peas
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Season the chicken thighs with salt and black pepper.
  2. In a large pot, heat the olive oil over medium-high heat. Add the chicken thighs and cook until browned on both sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the chopped onion, green bell pepper, and minced garlic. Cook until the vegetables are softened.
  4. Add the rice to the pot and stir to coat it with the vegetables and oil.
  5. Pour in the chicken broth, tomato sauce, cumin, oregano, and paprika. Stir to combine.
