Ingredients
- 2 lbs chicken thighs, bone-in and skin-on
- 1 tsp salt

- 1 cup long-grain white rice
- 1 3/4 cups chicken broth
- 1/2 cup tomato sauce

- 1 cup frozen peas
- 1/4 cup chopped fresh cilantro
Instructions
- Season the chicken thighs with salt and black pepper.
- In a large pot, heat the olive oil over medium-high heat. Add the chicken thighs and cook until browned on both sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion, green bell pepper, and minced garlic. Cook until the vegetables are softened.
- Add the rice to the pot and stir to coat it with the vegetables and oil.
- Pour in the chicken broth, tomato sauce, cumin, oregano, and paprika. Stir to combine.
- Return the chicken thighs to the pot, nestling them into the rice mixture. Bring the liquid to a boil, then reduce the heat to low, cover the pot, and simmer for 20 minutes.
- After 20 minutes, add the frozen peas to the pot and continue to cook for an additional 5-10 minutes, or until the rice is tender and the chicken is fully cooked.
- Sprinkle the chopped cilantro over the top of the dish before serving.
