Ingredients
- 1 whole chicken, cut into pieces
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 4 cups chicken broth
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the cumin, turmeric, paprika, cinnamon, salt, and pepper, and cook for a few minutes until fragrant.
- Add the diced tomatoes and cook for another 5 minutes.
- Stir in the basmati rice and chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
- Fluff the rice with a fork and serve the Chicken and Rice hot.
