Ingredients

  • 1 whole chicken, cut into pieces
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 4 cups chicken broth

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. Add the chicken pieces to the pot and brown on all sides.
  3. Stir in the cumin, turmeric, paprika, cinnamon, salt, and pepper, and cook for a few minutes until fragrant.
  4. Add the diced tomatoes and cook for another 5 minutes.
  5. Stir in the basmati rice and chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
  6. Fluff the rice with a fork and serve the Chicken and Rice hot.
