Ingredients
- 2 lbs chicken thighs, bone-in
- 2 lbs taro root, peeled and diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1/2 tsp ground allspice
- 1/4 tsp cayenne pepper
- 1 cup chicken broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Season the chicken thighs with salt and pepper.
- Heat the vegetable oil in a large pot over medium heat. Brown the chicken thighs on both sides, then remove and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until fragrant.
- Add the diced taro root, ground cumin, ground turmeric, ground allspice, and cayenne pepper. Stir to combine.
- Pour in the chicken broth and return the browned chicken thighs to the pot.
- Cover and simmer for 45-50 minutes, or until the chicken is cooked through and the taro is tender.
- Adjust seasoning with salt and pepper if needed.
