Ingredients

  • 2 lbs chicken thighs, bone-in
  • 2 lbs taro root, peeled and diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1/2 tsp ground allspice
  • 1/4 tsp cayenne pepper
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium heat. Brown the chicken thighs on both sides, then remove and set aside.
  3. In the same pot, add the chopped onion and minced garlic. Sauté until fragrant.
  4. Add the diced taro root, ground cumin, ground turmeric, ground allspice, and cayenne pepper. Stir to combine.
  5. Pour in the chicken broth and return the browned chicken thighs to the pot.
  6. Cover and simmer for 45-50 minutes, or until the chicken is cooked through and the taro is tender.
  7. Adjust seasoning with salt and pepper if needed.
