Chicken and Vegetable Couscous (Couscous au Poulet et aux Légumes)

Ingredients
- 1 lb chicken, cut into pieces
- 2 cups couscous
- 1 onion, chopped
- 2 carrots, sliced
- 1 zucchini, diced
- 1 bell pepper, chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- Season the chicken pieces with salt, pepper, cumin, and paprika.
- In a large pot, heat the olive oil over medium heat. Add the seasoned chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Add the carrots, zucchini, bell pepper, and tomatoes to the pot. Cook for 5 minutes, stirring occasionally.
- Return the chicken to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
- Stir in the couscous, cover the pot, and remove it from the heat. Let it sit for 10 minutes to allow the couscous to absorb the liquid.
- Fluff the couscous with a fork and serve hot.
