Chicken and Vegetable Couscous (Couscous au Poulet et aux Légumes)

Ingredients

  • 1 lb chicken, cut into pieces
  • 2 cups couscous
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 zucchini, diced
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Season the chicken pieces with salt, pepper, cumin, and paprika.
  2. In a large pot, heat the olive oil over medium heat. Add the seasoned chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, sauté the onion and garlic until softened.
  4. Add the carrots, zucchini, bell pepper, and tomatoes to the pot. Cook for 5 minutes, stirring occasionally.
  5. Return the chicken to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
  6. Stir in the couscous, cover the pot, and remove it from the heat. Let it sit for 10 minutes to allow the couscous to absorb the liquid.
  7. Fluff the couscous with a fork and serve hot.
