Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 zucchinis, sliced
  • 1 potato, diced
  • 1 cup pumpkin, diced
  • 1 cup okra, chopped
  • 1 cup green beans, chopped
  • 1 tablespoon tomato paste
  • 2 tablespoons Kuwaiti spice blend (baharat)
  • 6 cups chicken broth
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the chicken pieces to the pot and brown on all sides.
  3. Stir in the Kuwaiti spice blend and tomato paste, coating the chicken evenly.
  4. Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for 30 minutes.
  5. Add the tomatoes, carrots, potato, pumpkin, and okra to the pot. Simmer for another 15 minutes.
  6. Finally, add the zucchinis and green beans, and cook for an additional 10 minutes until all the vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Serve the Chicken and Vegetable Stew hot, with rice or bread on the side.
