Chicken And Vegetable Stew (kuwaiti Margoog)
This Chicken and Vegetable Stew, also known as Kuwaiti Margoog, is a traditional dish from Eastern Arabian cuisine. It is a hearty and flavorful stew that is perfect for a comforting meal.
Ingredients
- 2 lbs chicken, cut into pieces
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 carrots, sliced
- 2 zucchinis, sliced
- 1 potato, diced
- 1 cup pumpkin, diced
- 1 cup okra, chopped
- 1 cup green beans, chopped
- 1 tablespoon tomato paste
- 2 tablespoons Kuwaiti spice blend (baharat)
- 6 cups chicken broth
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the Kuwaiti spice blend and tomato paste, coating the chicken evenly.
- Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for 30 minutes.
- Add the tomatoes, carrots, potato, pumpkin, and okra to the pot. Simmer for another 15 minutes.
- Finally, add the zucchinis and green beans, and cook for an additional 10 minutes until all the vegetables are tender.
- Season with salt and pepper to taste.
- Serve the Chicken and Vegetable Stew hot, with rice or bread on the side.
