Chicken Balchão Pulao

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 2 onions, finely chopped
  • 4-5 dry red chilies
  • 1-inch ginger, minced
  • 6-8 garlic cloves, minced
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 cup vinegar
  • 1/4 cup oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. Marinate the chicken pieces with turmeric powder, red chili powder, and salt. Let it sit for 15 minutes.
  3. Heat oil in a pan and sauté the onions, dry red chilies, ginger, and garlic until the onions are golden brown.
  4. Add the marinated chicken and cook until it's tender and the oil separates.
  5. Pour in the vinegar and cook for another 5 minutes. Adjust the seasoning if needed.
  6. In a separate pot, bring water to a boil and add the soaked rice. Cook until the rice is 90% done. Drain and keep aside.
  7. Layer the cooked rice over the chicken mixture in the pan. Cover and cook on low heat for 10-15 minutes.
  8. Garnish with fresh coriander leaves and serve hot.
