Chicken Balchão Pulao
Chicken Balchão Pulao is a flavorful and aromatic rice dish from the Goan Catholic Cuisine, featuring a spicy and tangy chicken preparation served with fragrant rice.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 2 onions, finely chopped
- 4-5 dry red chilies
- 1-inch ginger, minced
- 6-8 garlic cloves, minced
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 cup vinegar
- 1/4 cup oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- Marinate the chicken pieces with turmeric powder, red chili powder, and salt. Let it sit for 15 minutes.
- Heat oil in a pan and sauté the onions, dry red chilies, ginger, and garlic until the onions are golden brown.
- Add the marinated chicken and cook until it's tender and the oil separates.
- Pour in the vinegar and cook for another 5 minutes. Adjust the seasoning if needed.
- In a separate pot, bring water to a boil and add the soaked rice. Cook until the rice is 90% done. Drain and keep aside.
- Layer the cooked rice over the chicken mixture in the pan. Cover and cook on low heat for 10-15 minutes.
- Garnish with fresh coriander leaves and serve hot.
