Chicken Cafreal Biryani Casserole
Chicken Cafreal Biryani Casserole is a delicious fusion dish that combines the flavors of Goan Catholic Cuisine with the aromatic spices of biryani. This casserole is a perfect blend of tender chicken marinated in a vibrant green masala, layered with fragrant basmati rice, and baked to perfection.
Ingredients
- 1 kg chicken, cut into pieces
- 2 cups basmati rice, soaked for 30 minutes
- 1 bunch coriander leaves
- 1 bunch mint leaves
- 6-8 green chilies
- 1-inch ginger
- 8-10 garlic cloves
- 1 tsp cumin seeds
- 1 tsp black peppercorns
- 1-inch cinnamon stick
- 4-5 cloves
- 1 cup yogurt
- 1 lemon, juiced
- Salt to taste
- 2 tbsp oil
- 2 onions, thinly sliced
- 1 tomato, sliced
- Fried onions for garnish
Instructions
- Grind coriander leaves, mint leaves, green chilies, ginger, garlic, cumin seeds, black peppercorns, cinnamon, cloves, yogurt, lemon juice, and salt to a smooth paste to make the cafreal marinade.
- Marinate the chicken pieces with the cafreal marinade and refrigerate for at least 2 hours or overnight.
- In a large pot, heat oil and sauté the sliced onions until golden brown. Add the marinated chicken and cook until the chicken is tender.
- In a separate pot, parboil the soaked basmati rice with some whole spices (cumin seeds, cinnamon, cloves) and salt. Drain and keep aside.
- Layer the cooked chicken at the bottom of a casserole dish, followed by a layer of parboiled rice. Repeat the layers and top with fried onions.
- Cover the casserole dish and cook on low heat for 20-25 minutes or until the flavors are well infused.
- Serve the Chicken Cafreal Biryani Casserole hot with raita and salad.
