Ingredients

  • 1 kg chicken, cut into pieces
  • 2 cups coconut milk
  • 1 onion, finely chopped
  • 3-4 green chilies, slit
  • 1-inch ginger, grated
  • 4-5 garlic cloves, minced
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 2-3 sprigs of curry leaves
  • Salt to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add chopped onions, green chilies, grated ginger, and minced garlic. Sauté until the onions turn golden brown.
  3. Add the chicken pieces, turmeric powder, and salt. Cook until the chicken is lightly browned.
  4. Pour in the coconut milk and add curry leaves. Stir well and bring to a gentle simmer.
  5. Cover the pan and cook for 20-25 minutes, or until the chicken is cooked through and the gravy thickens.
  6. Adjust the seasoning if needed and serve hot with steamed rice or bread.
