Ingredients

  • 1 whole chicken, cut into pieces
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup walnuts
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  2. Add the chicken pieces to the pot and brown them on all sides.
  3. While the chicken is cooking, place the walnuts in a food processor and pulse until finely ground.
  4. Once the chicken is browned, add the ground walnuts, paprika, cumin, and cayenne pepper to the pot. Stir to coat the chicken with the spices.
  5. Pour in the chicken broth and season with salt and pepper. Bring the mixture to a simmer, then reduce the heat and let it cook for 30-35 minutes, or until the chicken is cooked through.
  6. Once the chicken is cooked, remove it from the pot and shred it using two forks.
  7. Return the shredded chicken to the pot and stir to combine with the creamy walnut sauce.
  8. Adjust the seasoning if needed, then serve the Chicken Cherkesskaya hot, garnished with a sprinkle of paprika and chopped walnuts.
