Chicken Cherkesskaya (circassian Style Chicken Kofta Curry)

Ingredients

  • 1 lb ground chicken
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • 1 cup walnuts
  • 1 cup chicken broth
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, mix together the ground chicken, onion, garlic, cumin, paprika, coriander, cayenne pepper, breadcrumbs, parsley, cilantro, salt, and pepper. Form the mixture into small kofta (meatball) shapes.
  2. Heat the olive oil in a large skillet over medium heat. Add the kofta and cook until browned on all sides and cooked through, about 10-12 minutes.
  3. While the kofta are cooking, prepare the walnut sauce. In a food processor, blend the walnuts and chicken broth until smooth.
  4. Transfer the walnut mixture to a saucepan and heat over low heat. Season with salt and pepper to taste.
  5. To serve, place the kofta on a serving platter and pour the warm walnut sauce over the top.
