Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup mayonnaise
  • 1/4 cup Old Bay seasoning
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 lemon, juiced
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix together the mayonnaise, Old Bay seasoning, breadcrumbs, and Parmesan cheese.
  3. Season the chicken breasts with salt and pepper, then spread the mayonnaise mixture evenly on top of each breast.
  4. In a large oven-safe skillet, heat the butter and olive oil over medium-high heat.
  5. Add the chicken breasts to the skillet and cook for 3-4 minutes on each side, until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
  7. Remove the skillet from the oven and squeeze the lemon juice over the chicken.
  8. Sprinkle with chopped parsley and serve hot.
