Chicken Chesapeake

Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup mayonnaise
- 1/4 cup Old Bay seasoning
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 lemon, juiced
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together the mayonnaise, Old Bay seasoning, breadcrumbs, and Parmesan cheese.
- Season the chicken breasts with salt and pepper, then spread the mayonnaise mixture evenly on top of each breast.
- In a large oven-safe skillet, heat the butter and olive oil over medium-high heat.
- Add the chicken breasts to the skillet and cook for 3-4 minutes on each side, until golden brown.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
- Remove the skillet from the oven and squeeze the lemon juice over the chicken.
- Sprinkle with chopped parsley and serve hot.
