Chicken Chowder (chupe De Pollo)
Chicken Chowder, known as Chupe de Pollo in Peruvian cuisine, is a comforting and hearty soup that is perfect for a cozy meal. This dish is packed with tender chicken, potatoes, corn, and a flavorful broth that is sure to warm you up on a chilly day.
Ingredients
- 2 boneless, skinless chicken breasts, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 large potatoes, peeled and diced
- 2 cups corn kernels
- 4 cups chicken broth
- 1 cup evaporated milk
- 1 tablespoon aji amarillo paste (Peruvian yellow chili paste)
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 tablespoon vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
- Add the diced chicken to the pot and cook until browned on all sides.
- Stir in the aji amarillo paste and ground cumin, then add the diced potatoes and corn kernels.
- Pour in the chicken broth and bring the chowder to a simmer. Let it cook for about 20 minutes, or until the potatoes are tender.
- Stir in the evaporated milk and season the chowder with salt and pepper to taste. Let it simmer for an additional 10 minutes.
- Once the chowder has thickened slightly, remove it from the heat and let it cool for a few minutes before serving.
