Chicken Chowder (chupe De Pollo)

Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 large potatoes, peeled and diced
  • 2 cups corn kernels
  • 4 cups chicken broth
  • 1 cup evaporated milk
  • 1 tablespoon aji amarillo paste (Peruvian yellow chili paste)
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. Add the diced chicken to the pot and cook until browned on all sides.
  3. Stir in the aji amarillo paste and ground cumin, then add the diced potatoes and corn kernels.
  4. Pour in the chicken broth and bring the chowder to a simmer. Let it cook for about 20 minutes, or until the potatoes are tender.
  5. Stir in the evaporated milk and season the chowder with salt and pepper to taste. Let it simmer for an additional 10 minutes.
  6. Once the chowder has thickened slightly, remove it from the heat and let it cool for a few minutes before serving.
